Friday seems to be pizza night around here. But it's been years since we ordered a pizza for delivery. And frankly we never found one we liked since we moved into this neighborhood 22 years ago. We tried, but.

Instead, we rely on our God-given ability to make them. At first we made our own dough, too, but we found a dough just as good and have been buying that instead to make this a quicker meal option.

We start by making a cup of coffee.

By which we mean we put a cup of water into the microwave and press the 'Beverage' button to warm it up. That also makes a nice moist environment for the dough to rise in for a couple of hours.

It's no trouble to roll the dough out. Sometimes we use a rolling pin, sometimes centrifugal force (twirling it in front of the kitchen window). It just barely fits on a cookie sheet as the oven warms up as high as it will go.

We oil the dough and salt it before anything else. Then we put some sort of sauce on it. White or red. Then some cheese if we're having cheese on it (not always) and then the protein (mostly seafood these days).

Then the fun stuff. It's important to keep it simple, though. Onions, scallions, roasted red peppers, capers, black olives, you name it.

Into the hot oven it goes for 12 minutes, enough time to make a salad from scratch. Then we pull out the cookie sheet, slide the pizza onto a cutting board and take it into the dining room.

Sometimes it looks so appetizing sitting there that we have to take a photo.
